Balsamico ABTM

The precious must, obtained from local "Lambrusco" and "Trebbiano" grape cultivars, is first cooked in open cauldrons to concentrate the flavor and caramelize sugars. Then it is left to age in barrels of selected woods, changing barrel every year, from the largest to the smallest, for a process which lasts a minimum of 12 years. It then turns into a sweet-sour nectar which has to be tested by a panel of experts chosen by the "Consorzio Produttori", THE consortium of producers of the "Aceto Balsamico Tradizionale di Modena", which then proceed to bottle the ABTM in bottles which have been designed by Giugiaro and have the same shape for all producers. THIS is the real Aceto Balsamico, a unique P.D.O. governed by EU regulations, no vinegar or caramel added, no shortcuts taken. As soon as you savor it, you will understand why.
